Chocolate Oatmeal Cake
1 cup quick oatmeal
1 stick (1/2 cup) butter or margarine
1 1/2 cups boiling water
2 eggs
1/2 cup cocoa
1 1/2 cups granulated sugar
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Heat oven to 375 degrees F. Grease and flour a 9-inch square pan.
Pour boiling water over the oatmeal and butter; let set for 20 minutes, stirring
frequently.
Add eggs to the oatmeal mixture, blending well.
Sift together the dry ingredients, and add to the oatmeal and egg mixture. Stir
well. Pour into prepared pan. Bake for about 25-30 minutes or until it tests
done.
Chocolate Icing:
1/2 cup cocoa
1/2 teaspoon salt
2 cups granulated sugar
1/2 cup milk
1/2 cup butter or margarine
Combine all ingredients and boil together for 2 minutes. Remove from heat and
add 1 teaspoon vanilla extract. Cool until lukewarm. Beat until creamy enough
to spread. If the frosting is too thin, add confectioners' sugar to make the
right spreading consistency.
NOTE: This cake doubles well. If you double put it in a 9 x 13-inch pan.
