Blackberry Wine Cake

This cake is moister and better if made a day or two ahead.

Ingredients

Cake

  • 1 (18.25 ounce) box white cake mix*
  • 1 small box blackberry gelatin
  • 4 eggs
  • 1 cup blackberry wine
  • 1/2 cup vegetable oil

Blackberry Wine Glaze

  • 1/2 cup blackberry wine
  • 1 cup confectioners' sugar
  • 1 1/2 teaspoons butter

Instructions

  1. Heat oven to 350 degrees F. Grease a Bundt pan.

Cake

  1. Mix all ingredients together and pour into prepared pan.
  2. Bake for 40 to 45 minutes or until done.

Blackberry Wine Glaze

  1. Boil all ingredients, then pour 1/2 of the glaze over warm cake.
  2. Let cake sit until cool and pour remaining glaze over cake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
