Peach Up-Side Down Cake
Yield: 8 to 10 servings
Ingredients
- 1/3 cup butter
- 2/3 cup granulated sugar
- 2/3 cup milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/3 teaspoon salt
- 1 2/3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/3 cup butter
- 1 cup light brown sugar
- 1 1/2 cups sliced peaches
Instructions
- Cream 1/3 cup butter with 2/3 cup sugar.
- Add milk, eggs, vanilla extract and almond extract and mix well.
- Sift dry ingredients and add to creamed mixture. Beat well.
- For the peach mixture, place 1/3 cup butter and 1 cup brown sugar in heavy (cast iron) fry pan.
- Eat slowly and stir constantly until brown and melted.
- Add peaches.
- Cover with cake batter and bake in the frying pan at 350 degrees F for 25 minutes.
