Premium Packet Potatoes recipe

1 small onion, thinly sliced
4 medium red potatoes, cut into bite-size pieces
1 medium bell pepper, diced
1/2 cup Italian or Ranch salad dressing

Spray an 18 x 24-inch sheet of heavy duty aluminum foil with nonstick cooking spray. Sprinkle onion slices down the center of the sprayed side of foil.

Combine remaining ingredients , except dressing, in a small bowl; salt and pepper to taste. Toss with dressing to coat. Layer mixture evenly over onion slices. Wrap foil into a packet. Grill, covered, over medium/high heat.
