Coconut Pecan Pralines
Ingredients
- 2 1/2 cups granulated sugar
- 1/2 cup evaporated milk
- 1/2 cup corn syrup
- 1/2 cup butter
- 1 teaspoon vanilla extract
- 2 to 2 1/2 cups chopped pecans
- 2 1/2 cups shredded coconut
Instructions
- Lay out a sheet of wax paper on a 15 x 10 inch jellyroll pan.
- Combine sugar, evaporated milk, corn syrup and butter in a large saucepan. Bring to a boil and boil for 3 minutes, stirring constantly.
- Remove from the heat and add the vanilla extract, pecans and coconut. Stir for about 4 minutes.
- Place spoonsful of candy on wax paper. Let to rest until the pralines have become firm.
Notes
Humidity will cause pralines to become sugary.
