2 medium potatoes
1 medium onion
1 small jalape�o pepper (optional)
6 to 8 flour tortillas
5 thick slices bacon
4 eggs
Dice potatoes, bacon and onions. Mix together. Cook in a covered cast iron
skillet until potatoes are soft.
Beat eggs and pour over the potato mixture. Salt and pepper to taste. Stir
to mix. Cover and cook until eggs are done. Spread in hot tortillas and serve.
