Brennan's Bistro & Catering Three Potato Pave recipe

Note: Pave is French for pavement or paving stone, such as the shape and look of this final product.

2 Idaho potatoes
3 Yukon Gold Potatoes
1 sweet potato
3 ounces Asiago cheese, grated
2 ounces sweet onion (such as Vidalia)

Slice thinly on meat slicer or mandolin, all potatoes. Grease or pan spray 8-inch loaf pan.

Beginning with Idahos, layer bottom of pan, slightly overlapping. Top with thin layer of onion followed by cheese. Repeat process with Yukon Golds and sweet potato until reaching 1 inch from top of pan. Heat oven to 350 degrees F and fill second bread pan with dried beans (this pan will be used as a weight on top of the potato pan). Place potato pan with weight pan on top, in center oven rack. Bake for 45 minutes until potatoes are tender.

Remove from oven and cool under refrigeration for 4 hours until cold. Carefully remove from bread pan and slice into 1 1/2-inch segments. Reheat in oven.
