Evelyn's Drive-In Grape-Nuts Pudding
Source: Evelyn's, Tiverton, Rhode Island
7 eggs
3/4 cup granulated sugar
2 cups whole or low-fat milk
1 1/2 teaspoons vanilla extract
1/3 cup Post Grape-Nuts cereal
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Heat the oven to 350 degrees F. Lightly butter a shallow 2-quart glass baking
dish.
In a large bowl, whisk the eggs with the sugar. Whisk in the milk and vanilla
extract. Pour this custard mixture into the prepared dish. Sprinkle the Grape-Nuts
evenly over the top and sprinkle with cinnamon and nutmeg.
Place the pudding dish into a larger baking pan and fill the larger pan with
boiling water to come about halfway up the sides of the pudding dish. Bake for
25 to 35 minutes, until the custard is softly set and a knife inserted in the
center comes out clean. Do not overcook as the pudding will continue to cook
a little bit after it comes out of the oven.
Cool on a wire rack for at least 30 minutes. Serve the pudding warm or lukewarm,
or refrigerate and serve chilled.
Makes 6 to 8 servings.
