1 center cut pork loin
Seasoning mix of salt, pepper, Mrs. Dash (to taste)
1 recipe Ginger Peach Chutney (recipe below)
Clean the silver skin and or fat that is usually on the loin. Season with the seasoning mix. Roast in a hot oven (425 degrees F) for 15 minutes, turn down oven to 375 degrees F and roast for 20 minutes more, until the internal temperature is 140 degrees F. Allow to rest for 10 minutes before slicing, if serving warm, allow to cool and refrigerate if serving warm. Serve garnished with the ginger peach chutney.
Ginger Peach Chutney:
2 peaches, peeled and diced
3 tablespoons onion, diced finely
3 tablespoons red bell pepper, diced finely
2 green onions, sliced
2 tablespoons pickled ginger, diced
3 tablespoons granulated sugar
3 tablespoons rice vinegar
Mix all ingredients and allow to marinate overnight in the refrigerator. The chutney can be made spicy with the addition of either sauce or jalapenos.
