Harvey House Chicken Cacciatore

2 whole chickens
1/2 cup flour
1 teaspoon salt
1/8 teaspoon pepper
1/4 cup butter or olive oil
1 medium onion, sliced
1/2 pound fresh mushrooms, sliced
1 clove garlic, minced
12 ripe olives, whole
1 (15 ounce) can tomato sauce
1/2 cup chicken stock

Cut chicken in quarters; dust with mixture of flour, salt and pepper. Sauté in butter or olive oil until golden brown. Add remaining ingredients, cover and simmer over low heat 20-30 minutes.

Makes 8 servings.
