Hasenour's Barbecue Sauce

Source: The Courier-Journal 6/16/1993 - Hasenour's, Louisville, Kentucky

2 (15 ounce) cans tomato sauce
1 (12 ounce) can tomato paste
1 (32 ounce) bottle ketchup
1/4 cup granulated sugar
2 tablespoons mustard
2 tablespoons Worcestershire sauce
1 teaspoon Tabasco
2 cloves fresh garlic, crushed
4 teaspoons salt
1/2 cup brown sugar
2 teaspoons horseradish (do not use creamy)
1/2 cup soy sauce
1/4 cup vinegar
1 quart water

In a large kettle combine all ingredients. Bring to a simmer and cook 15 minutes. Store in refrigerator. Use with pork, ribs and chicken.

Makes 3 quarts.

NOTES: For a smoky flavor, add 1 tablespoon liquid smoke. For a hotter sauce, add 1 tablespoon dry mustard, 1 tablespoon chili powder and Tabasco to taste. For still another flavor, add 1 lemon, sliced thin. Remove after simmering.
