4 cooked chicken breasts or 4 cups chopped chicken
2 cans chicken broth
2 cans chopped tomatoes
4 tablespoons chopped fresh cilantro
1 medium onion, sliced in rings and saut�ed in butter
1/2 teaspoon black pepper
Taco chips, crushed
Monterey jack cheese, grated
Bring chicken, chicken broth, tomatoes, cilantro, onion and black pepper
to a boil. Simmer 45 minutes to 1 hour.
Serve soup over a thin layer of crushed taco chips in bottom of soup bowl.
Sprinkle Monterey jack cheese over the top.
