Source: Chef Maurice Wilson - Omar's Carriage House, Norfolk, Virginia
2 pounds medium flounder filets
3 cups potato chips, crumbled
1 cup all-purpose flour
2 large eggs
1 cup milk
1/2 cup vegetable oil
Dredge flounder in flour. Then dip in egg wash (eggs and milk combination),
then place in potato chip crumbs.
In a large saut� pan over medium heat add oil. Add flounder to pan and cook
until golden brown. Flip, then finish in a 350 degrees F oven for 6 to 7 minutes.
Serve immediately.
