Oatmeal-Raisin Ice Cream Sandwiches

8 soft round oatmeal cookies
1 pint vanilla ice cream
1/4 cup salted peanuts, chopped
1/4 cup raisins

Top 4 cookies with 1/2 cup ice cream each. Cover with remaining cookies. Gently squeeze sandwiches until ice cream spreads to edge of cookies.

Mix peanuts and raisins in a shallow dish. Roll sides of sandwiches in this mixture. The ice cream should be covered with peanuts and raisins.
