Mint Meringue Trees
2 egg whites
1/4 teaspoon cream of tartar
1/8 teaspoon salt
1/2 cup granulated sugar
1/4 teaspoon mint extract
1/4 teaspoon green food coloring
Decorating candies
Beat egg whites with cream of tartar and salt until foamy and double. Beat
in sugar, 1 tablespoon at a time, beating until sugar dissolves and meringue
forms firm peaks. Stir in mint and food coloring.
Fit a star tip on pastry bag. Press onto cookie sheet in tiny tree shapes.
Bake at 225 degrees F for 1 hour 15 minutes or until firm. Cool 10 minutes.
