Yield: 8 servings
1 cup sour cream
2 tablespoons prepared horseradish
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/8 teaspoon ground pepper, or to taste
Combine all the ingredients, cover, and refrigerate until needed. Sauce will stay good in the refrigerator for up to 2 weeks.
Yield: 8 servings, about 2 heaping tablespoons each.

This sauce is quick and easy to put together, and pairs well
with roast beef, corned beef, or pastrami. It can be put to
use as a quick dip for chips or vegetables, too.
