Bar, Square and Slice Cookie Recipes
Tropical Fruit Bars
1 (20 ounce) can crushed pineapple, drained
1 cup all-purpose flour
1/3 cup butter, melted
1/4 cup plus 1/3 cup sliced (not slivered) almonds
1/4 cup plus 1/3 cup granulated sugar
8 ounces cream cheese, softened
1 egg
1 teaspoon vanilla extract
1/3 cup flaked coconut
Drain pineapple. Combine flour, butter, 1/4 cup chopped almonds, and 1/4
cup sugar until crumbly. Press into a 9-inch square pan. Bake at 350 degrees
F for 12 minutes.
Beat cream cheese, egg, 1/3 cup sugar, vanilla, and pineapple. Pour over
crust. Top with coconut and 1/3 cup almonds. Cool on wire rack. Refrigerate
at least 2 hours before cutting into bars.
Return to oven and continue baking for an additional 35 to 40 minutes. Cool
on wire rack.
