1/3 cup shortening
1/3 cup sugar
1/2 cup molasses
1 egg
1 cup sifted flour
1/4 cup non-fat dry milk
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1 cup grated raw carrots
1 1/4 cups rolled oats
1/4 cup raisins
Heat oven to 400 degrees F.
Cream together shortening, sugar, molasses and egg.
Sift dry ingredients together; stir into creamed mixture. Add grated carrot, rolled oats and raisins; mix well. Drop by rounded teaspoonsful onto lightly greased cookie sheets. Bake for 10 minutes, until golden brown.
Makes 6 dozen cookies.
Big Four Cookies recipe
The big four are protein, iron, calcium, vitamin A.1/3 cup shortening
