Cashew Cookies with Browned Butter Icing

Ingredients
Cookies
- 1 cup firmly packed brown sugar
- 1/2 cup butter
- 1 egg
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup sour cream
- 2 cups salted cashews
Browned Butter Icing
- 1/2 cup butter
- 3 tablespoons evaporated milk
- 2 cups confectioners' sugar
- 1/2 teaspoon vanilla extract
- Cashew nuts
Instructions
Cookies
- Heat oven to 350 degrees F.
- Cream brown sugar and butter.
- Add egg and vanilla and beat well.
- Add sifted flour, baking soda, baking powder and salt alternately with sour cream. Mix well.
- Carefully fold in cashews.
- Drop by teaspoon onto a greased cookie sheet.
- Bake for 12 minutes or until lightly browned.
- Cool and frost.
Browned Butter Icing
- Lightly brown butter in saucepan; remove from heat and add sugar and evaporated milk.
- Stir in vanilla extract.
- Frost cookies.
- Put 1 cashew on top of each cookie.
