Yield: about 24 cookies

Ingredients

  • 1/4 cup whipping cream
  • 1/3 cup granulated sugar
  • 1/4 cup butter
  • 1 cup sliced almonds (grind 1/2 in blender)
  • 2 tablespoons all-purpose flour
  • 1/2 cup candied orange peel, chopped
  • 1/4 teaspoon almond extract
  • 1/4 pound semisweet chocolate, melted

Instructions

  1. Heat oven to 350 degrees F. Grease and flour* a cookie sheet.
  2. Combine cream, sugar and butter in pan and cook, stirring until butter melts.
  3. Turn heat to medium high and bring to a boil.
  4. Remove from heat and add all other ingredients except chocolate.
  5. Drop by tablespoons onto the prepared cookie sheet. Leave plenty of room between cookies, for they spread when baked.
  6. Bake for 10 to 12 minutes or until edges are slightly brown.
  7. Cool for a minute or two.
  8. Remove to rack or wax paper.
  9. When completely cool, turn upside down and coat with melted chocolate.
