Smoky Cowboy Quesadillas

Ingredients

  • 1/2 cup bottled salsa
  • 8 (6 inch) fat-free flour tortillas
  • 1 cup (about 4 ounces) chopped smoked turkey ham
  • 1/2 cup (about 1 ear) fresh corn kernels
  • 1/4 cup chopped fresh cilantro
  • 3/4 cup shredded Monterey Jack cheese with jalapeño peppers

Instructions

  1. Spread 2 tablespoons salsa over each of 4 tortillas; top each with 1/4 cup ham, 2 tablespoons corn, 1 tablespoon cilantro, 3 tablespoons cheese and 4 tortillas.
  2. Place a nonstick skillet over medium heat until hot.
  3. Add 1 quesadilla; cook for 2 minutes on each side or until crisp.
  4. Repeat procedure with remaining quesadillas.
  5. Cut each quesadilla into 6 wedges.
