Deluxe Carrot-Pineapple Johnny Cake recipe

1 cup all-purpose flour
1 cup cornmeal
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup granulated sugar
1/4 cup shortening
1 cup buttermilk
1 egg
2 cups shredded carrots
1 cup crushed pineapple

Cream sugar and shortening together; add egg, buttermilk and dry ingredients, then add carrots and pineapple.

Place in greased and floured crock pot baking pan.

Cover and cook on HIGH for 2 to 3 hours.
