Morning Glory Muffins

Yield: approximately 6 dozen muffins depending on size

Ingredients

  • 2 cups raisins
  • 8 cups all-purpose flour
  • 4 cups granulated sugar
  • 2 tablespoons + 2 teaspoons baking soda
  • 2 tablespoons + 2 teaspoons cinnamon
  • 2 teaspoons salt
  • 12 eggs
  • 8 cups grated carrots
  • 4 cups grated apples
  • 2 cups almonds, sliced and toasted
  • 2 cups coconut, shredded and toasted
  • 2 tablespoons + 2 teaspoons vanilla extract
  • 2 2/3 cup corn oil

Instructions

  1. Heat oven to 400 degrees F. Grease muffin tins.
  2. Plump raisins in hot water, then drain.
  3. In a large bowl, whisk eggs, then oil and vanilla extract.
  4. Stir in carrots, apples, almonds, coconut and raisins.
  5. In another large bowl, mix dry ingredients together well.
  6. Pour wet ingredients over dry, and mix with a large spoon using big strokes until just combined (don't over-mix).
  7. Spoon into prepared muffin tins.
  8. Bake for about 15 minutes.
