Morning Glory Muffins
Yield: approximately 6 dozen muffins depending on size
Ingredients
- 2 cups raisins
- 8 cups all-purpose flour
- 4 cups granulated sugar
- 2 tablespoons + 2 teaspoons baking soda
- 2 tablespoons + 2 teaspoons cinnamon
- 2 teaspoons salt
- 12 eggs
- 8 cups grated carrots
- 4 cups grated apples
- 2 cups almonds, sliced and toasted
- 2 cups coconut, shredded and toasted
- 2 tablespoons + 2 teaspoons vanilla extract
- 2 2/3 cup corn oil
Instructions
- Heat oven to 400 degrees F. Grease muffin tins.
- Plump raisins in hot water, then drain.
- In a large bowl, whisk eggs, then oil and vanilla extract.
- Stir in carrots, apples, almonds, coconut and raisins.
- In another large bowl, mix dry ingredients together well.
- Pour wet ingredients over dry, and mix with a large spoon using big strokes until just combined (don't
over-mix).
- Spoon into prepared muffin tins.
- Bake for about 15 minutes.
