Parsley Buttered Potatoes
15 pounds potatoes, pared
Salt
1 1/2 cups parsley, chopped
2 cups butter, melted
Boil the potatoes. When cooked, add the salt, parsley and butter. Shake to
cover the potatoes with the butter and parsley.
Serves 45 - 50.
