Pudding and Mousse Recipes
Baked Rice Pudding
1/2 cup uncooked rice
3 cup milk
1/4 cup granulated sugar
1/4 cup raisins
1/2 teaspoon grated lemon zest
1/2 teaspoon cinnamon
A grating of fresh nutmeg
Combine all ingredients in a 2-quart ovenproof casserole or baking dish.
Bake in a preheated 350 degree F oven, stirring occasionally, until the rice
is tender and the milk has been absorbed, about 2 1/2 hours.
Serve warm or chilled.
Serves 4 to 6.
