Lime Mousse

1 cup heavy whipping cream
1/4 cup sugar
2 tablespoons lime juice
1 tablespoon grated lime peel
1 teaspoon vanilla extract
Lime slices and fresh mint, optional

Chill mixing bowl.

In a large mixing bowl, combine the cream, sugar, lime juice, lime peel and vanilla extract. Beat on high speed until soft peaks form, about 4 minutes. Spoon into dessert dishes.
Garnish with lime and mint if desired.

Makes 4 servings.
