Fruit Purees
Blackberry Puree:
1 pint blackberries
1 tablespoon granulated sugar
Wash blackberries and drain well in a colander. Pick off stems. Puree in
a food processor or blender with the sugar until the mixture is as smooth as
possible. Strain, discarding solids. Pour into a plastic squirt bottle and chill.
Raspberry Puree:
1 1/2 pints raspberries
2 teaspoons granulated sugar
Puree raspberries and sugar in a food processor or blender until completely
smooth. Strain, discarding solids. Pour into a plastic squirt bottle and chill.
Strawberry Puree:
1 pint strawberries
1 tablespoon granulated sugar
Wash strawberries, then core out stems to ensure that the woody core is
removed, Use a paring knife and cut a cone out of the top of the berry. Puree
strawberries and sugar in a food processor until completely smooth. Strain,
discarding solids. Pour into a plastic squirt bottle and chill.
