Cucumber Tomato Salad

An easy sweet/sour summer salad combining fresh tomatoes, cucumbers and red onions with rice vinegar and Equal. Find the rice vinegar in the Oriental aisle of your grocery store.

Cucumber Tomato Salad

Yield: 6 servings, 3/4 cup each

Ingredients

  • 1/2 cup rice vinegar*
  • 3 tablespoons Equal Spoonful**
  • 3 cups unpeeled 1/4 inch thick sliced cucumbers, quartered (about 2 medium)
  • 2 cups chopped tomato (about 1 large)
  • 1/2 cup chopped red onion
  • Salt and pepper to taste

Instructions

  1. Combine vinegar and Equal.
  2. Add cucumbers, tomato and onion.
  3. Season to taste with salt and pepper; mix well.
  4. Refrigerate, covered, for at least 30 minutes before serving.

Notes

*Distilled white vinegar may be substituted for rice vinegar.

** May substitute 4 1/2 packets Equal sweetener
