Watermelon Cake

1 tablespoon all-purpose flour
1 (18.25 ounce) box white cake mix
1 (3 ounce) box mixed fruit flavored gelatin
3/4 cup vegetable oil
1 cup cut-up watermelon pieces
4 eggs

Heat oven to 325 degrees F.

In a large bowl sprinkle the flour over the cake mix. Add the gelatin, oil and watermelon. Mix thoroughly with an electric mixer, adding the eggs one at a time. Divide the batter into 2 greased and floured 8-inch pans. Bake for about 30 minutes. Add icing when cake has cooled.

Icing:
1 stick (1/2 cup) margarine
1 (16 ounce) box confectioners' sugar
1/2 to 1 cup watermelon pieces

Soften margarine, add sugar. Blend in the watermelon gradually until a spreading consistency is reached. Red food coloring may be added for effect. Spread the icing generously over the cake.
