2 cups flour
1/3 cup shortening
1 1/2 tablespoon baking powder
3/4 cup sugar
1/2 tablespoon salt
1 egg
Red food color
1 tablespoon milk
1/3 cup miniature chocolate chips
1 tablespoon vanilla extract
Icing:
1 1/2 cups confectioners' sugar
1 tablespoon vanilla extract
Enough water to dip cookies
Cream butter, shortening and sugar. Add milk, egg, vanilla extract and red food color to look like watermelon flesh.
In separate bowl mix flour, baking powder and salt. Add to colored mixture and chill 1 hour.
Roll out cookies to 1/4 inch thick and cut into 3 or 4 inch circles. Then cut the circles in half to resemble a watermelon wedge. Gently place on lightly greased cookie sheet and press in mini chips to look like the seeds of the melon. Bake at 350 degrees F for about 8 minutes just until set, do not brown the edges. Cool.
Make icing and tint with enough green food color to resemble the rind of the melon. Dip the round edge of cookies in the green icing and place on wax paper to cool.
