Wheat-Free and Gluten-Free Recipes
Easy as 1, 2, 3, 4 Gluten-Free Cake

1 cup softened butter
2 cups granulated sugar
3 cups flour
1 1/2 cups rice flour
1 1/2 cups tapioca flour
1 tablespoon double-acting baking powder
4 eggs, separated
1 whole egg
1/2 teaspoon cream of tartar
1 teaspoon vanilla extract
Cream Cheese Frosting:
1/4 cup softened cream cheese
1/2 cup butter, softened
1 to 2 teaspoons vanilla extract
2 tablespoons cocoa powder (optional)
Powdered sugar
Whip 4 egg whites with cream of tartar.
In a separate bowl, cream together butter, sugar and vanilla extract.
Add whole egg and 4 egg yolks.
Add flour mixture. Mix gently for approximately 1 minute. Fold egg whites
into cake mixture.
Pour into a greased 9 x 13-inch pan. Bake at 350 degrees F for 25 to 30 minutes
or until a wooden pick stuck into center comes out clean.
Cream Cheese Frosting:
Combine frosting ingredients (except powder sugar) in n a Bosch bowl with cookie
paddles.
On speed one, mix ingredients thoroughly. Add powdered sugar by the cup until
you get the consistency you want. If you prefer, you can add milk to extend
the frosting.
A small capful of flavored oil, such as butter pecan or orange, can add a
nice variety of flavors.
