Gluten-Free Flour Mix recipe

Use this as a substitute for white wheat flour.

Yield: 3 cups GF mix:
2 cups white rice flour
1/3 cup tapioca flour
2/3 cup potato starch flour (not plain potato flour)

Yield: 9 cups GF mix:
6 cups white rice flour
1 cup tapioca flour
2 cups potato starch flour (not plain potato flour)

Combine all the ingredients in a large bowl and mix thoroughly. Sift the mixture into a large airtight container. Store in a container tightly closed.
