Hot and Spicy Pumpkin Seeds

1 cup raw, whole pumpkin seeds, cleaned
1/4 cup salt
6 cups water
1 tablespoon oil
Garlic powder to taste (optional)
Cayenne pepper to taste (optional)

Remove seeds from the pumpkin pulp and wash them thoroughly.

In a large bowl, add 1/4 cup salt to 6 cups water. Add pumpkin seeds and let soak overnight.

In the morning, drain water and lay seeds out to dry on a cookie sheet. When seeds are dry, toss them with 1 tablespoon oil until thoroughly coated. Add garlic powder and cayenne pepper or your favorite seasoning.

Spread the seeds out on a cookie sheet.

Bake at 350 degrees F for 30 to 60 minutes, stirring every 10 to 15 minutes while baking.

Yield: 1 cup roasted seeds
