Heart-Healthy Garlic Soup
Ingredients
- 2 tablespoons unsalted butter
- 1 tablespoon canola oil (or 3 tablespoons olive oil)
- 3 yellow onions, peeled, thinly sliced
- 1 head garlic cloves, separated, smashed, peeled, finely chopped (about 1/2 cup)
- 4 teaspoons dry powdered sage
- 2 teaspoons granulated sugar (optional)
- 1/4 cup port or red wine
- 5 cups salt-free canned or homemade chicken stock
Instructions
- Warm butter and canola oil in a large pot over medium heat.
- Add onions and cook, stirring occasionally, until golden brown (15 to 20 minutes).
- Reduce heat, add garlic, sage and sugar (if using) and continue to cook on medium-low heat, stirring, until garlic softens (5 to 8 minutes).
- Add port or red wine. Increase heat to high and cook for 3 minutes, stirring constantly to deglaze pan, scraping up the flavorful bits.
- Add chicken stock. Bring to a boil, reduce heat, cover and simmer 10 more minutes.
- Season to taste with salt and freshly ground black pepper.
- Serve with toasted crusty bread.
