Instead of a pastry brush, use a new 1 1/2-inch
wide paintbrush to brush on barbecue sauce and
melted butter.
Place charcoal briquettes in leftover cardboard
egg cartons and tie them shut. You've got easy-to-light
little packages.
Add a delicious flavor to barbecued foods
by sprinkling the coals with fresh herbs that
have been soaked in water.
Long, straight rosemary branches make great
grilling skewers. Strip needles and cut a point
on one end.
Warm the basting sauces you use on meat because
a cold sauce will slow the cooking.
Smoking
You can smoke food without a smoker and even
without a covered grill. To smoke without a
cover, place wet wood chips in an aluminum foil
package; punch small holes in the package with
a fork, and place directly on the charcoal.
