6 chicken breasts
1 teaspoon salt, divided
1/4 cup butter
2 1/2 tablespoons flour
1 tablespoon sugar
1/4 cup cumin
1/8 teaspoon allspice
2 canned chipotle chiles, chopped
3/4 cup orange juice
1 1/2 cups hot cooked rice
1/3 cup cilantro, for garnish
1 orange slice for garnish
Sprinkle chicken breasts with 1/2 teaspoon salt.
Heat butter in a skillet and brown the chicken. Remove. Add flour, sugar,
spices, chiles and remaining teaspoon salt to drippings in skillet and stir
until it forms a paste. Gradually stir in orange juice. Cook this mixture, stirring
constantly, until mixture thickens and comes to boil.
Add the chicken breasts and cover. Simmer over low heat until chicken is
tender, about 30-40 minutes.
Remove chicken to serving platter.
Serve with hot cooked rice and sauce. Garnish with orange slices and cilantro.
