Apricot Lamb with Ginger
1 onion, sliced
1 pound lean lamb, cubed
1 tablespoon ground ginger
1/4 teaspoon garlic powder
1 1/2 cups apricot nectar
Heat oil in a heavy nonstick skillet over medium high heat. Saute onion and
lamb 2-3 minutes, until lamb is browned. Add remaining ingredients and reduce
heat to low. Cover and simmer gently 40 minutes, or until lamb is tender.
