1 cup seedless raspberry preserves
1/2 cup light soy sauce
1/4 cup olive oil
2 cloves minced garlic
2 tablespoons grated fresh ginger
1 1/2 teaspoons chopped fresh rosemary (optional)
6 (3/4 pound) turkey tenderloins
Whisk together preserves, soy sauce, oil, garlic and ginger; rosemary, if desired. Reserve 1/2 cup marinade. Place turkey in plastic bag; pour marinade over turkey. Seal and refrigerate 8 hours, turning occasionally.
Remove turkey from marinade, discard marinade. Arrange turkey in a broiler pan coated with cooking spray. Bake at 425 degrees F for 25 to 35 minutes or until a meat thermometer reads 170 degrees F, basting often with reserved marinade. Let stand 5 minutes before slicing.
Serves 6.
