Deer Bologna
Yield: 30 pounds
Ingredients
- 30 pounds ground deer meat
- 1 pound Tender Quick
- 1 ounce black pepper
- 1/2 cup granulated sugar
- 1/4 ounce salt
- 1 teaspoon garlic salt
- 1 1/2 teaspoons mace
- 3 tablespoons liquid smoke flavoring
Instructions
- Mix Tender Quick, pepper, sugar, salt, garlic salt and mace. Add to ground meet. Mix well. Put through a grinder.
- Press into wide-mouth jars and cook for 4 hours.
