8 cups sifted flour
2 cups granulated sugar
1/4 cup baking powder
1 tablespoon salt
1 teaspoon baking soda
1 tablespoon cinnamon
1 teaspoon ground cloves
1 tablespoon ginger
2 cups shortening
In a large bowl, soft together flour, sugar, baking powder, salt, baking soda, cinnamon, cloves and ginger. Mix well. With a pastry blender, cut in shortening until evenly distributed. Mixture will resemble cornmeal in texture. Put into a large airtight container. Label. Store in a cool, dry place. Use within 10-12 weeks.
Makes about 13 cups of Gingerbread Mix.
Variation: Substitute 2 cups of brown sugar for the granulated sugar.
Gingerbread:
2 cups Gingerbread Mix
1 egg
1/2 cup water
1/2 cup molasses
Mix well, and pour into a greased 9-inch pan. Bake for 20 minutes at 350 degrees F.
