1/2 cup butter
1/2 cup brown sugar
1 cup all-purpose flour
Combine and spread over bottom of buttered 9 x 13-inch glass baking pan. Bake at 350 degrees F for 15 minutes.
Filling
1 cup brown sugar
2 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon salt
2 eggs, beaten
1 cup coconut
1 cup chopped pecans, optional
1 teaspoon vanilla extract
Combine brown sugar, flour, baking powder and salt; add to beaten eggs, coconut, nuts and vanilla extract. Spread over hot bottom layer. Return to oven and bake 15 minutes more at 350 degrees F.
Icing
1 1/2 cups confectioners' sugar
2 tablespoons orange juice
1 tablespoon lemon juice
Grated rind of 1 lemon
Combine and ice while hot. Cool; cut into squares.
Makes about 2 dozen squares.
Orange Coconut Squares recipe
