1 package brown gravy mix (such as McCormick) *
1/4 cup all-purpose flour
1/4 teaspoon garlic powder
Several dashes onion salt or onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon vegetable oil
1 pound boneless skinless chicken breast halves, cut into strips
1 medium onion, sliced and separated into rings
1/2 cup dry Sherry wine
Prepare gravy mix according to package directions; set aside.
Combine flour and seasonings in a zip-top bag; add chicken, shake to coat.
Heat oil in a skillet over medium high heat. Add chicken, cook until brown on
one side, about 4 minutes; add onion. Turn over chicken pieces and cook until
brown on second side and onions are soft, 3-4 minutes more.
Add Sherry to pan, stirring and scraping to loosen any bits stuck to the pan
bottom. Cook for 1 minute. Add brown gravy and stir well to mix. Serve with
rice or mashed potatoes.
* Choose a gravy mix that makes from 1 to 1 1/2 cups of gravy.
