Spiked Spiced Nuts
5 pounds walnuts
1 pound confectioners' sugar
1/2 teaspoon ground ginger
1 teaspoon nutmeg
1 teaspoon cinnamon
2 tablespoons pumpkin spice mix
1/2 teaspoon salt
1/2 cup vegetable oil
2 egg whites, slightly beaten
1/4 cup good rum
Heat oven to 350 degrees F.
Spread nuts on a large cookie sheet and heat in the oven for 15 minutes.
While the nuts are heating, mix the sugar, ginger, nutmeg, cinnamon, pumpkin
spice and salt. Add the vegetable oil; mix. Add the egg whites, mix, and then
add the rum and mix one final time. Pour the hot nuts into the mixture and toss
to coat. Spread on foil to dry for about one hour.
Store covered in refrigerator.
