Baked Chow Mein Chicken
Yield: 6 servings
Ingredients
- 1 (5 ounce) can chow mien noodles, crushed
- 1/3 cup chopped blanched almonds
- 1/3 cup butter or margarine
- 2 tablespoons soy sauce
- 2 teaspoons chopped fresh ginger
- 1/4 teaspoon ground black pepper
- 6 boneless skinless chicken breast halves
Instructions
- Heat oven to 400 degrees F.
- Place chow mien noodles in a plastic zipper-top storage bag. Roll dough
with roller over bag to finely crush noodles. Combine crushed noodles and nuts.
- Melt butter in Covered Microwave-Cooker. Add soy sauce, ginger and pepper; stir to combine. Dip chicken breasts in mixture, then roll in noodles. Gently press noodle mixture onto chicken. Lay in bottom of 9 x 13 inch Baker.
- Bake for 25 to 30 minutes or until juices run clear when chicken is pierced
with a fork.
- Serve immediately.
