Baked Chow Mein Chicken

Ingredients

  • 1 (5 ounce) can chow mien noodles, crushed
  • 1/3 cup chopped blanched almonds
  • 1/3 cup butter or margarine
  • 2 tablespoons soy sauce
  • 2 teaspoons chopped fresh ginger
  • 1/4 teaspoon ground black pepper
  • 6 boneless skinless chicken breast halves

Instructions

  1. Heat oven to 400 degrees F.
  2. Place chow mien noodles in a plastic zipper-top storage bag. Roll dough with roller over bag to finely crush noodles. Combine crushed noodles and nuts.
  3. Melt butter in Covered Microwave-Cooker. Add soy sauce, ginger and pepper; stir to combine. Dip chicken breasts in mixture, then roll in noodles. Gently press noodle mixture onto chicken. Lay in bottom of 9 x 13 inch Baker.
  4. Bake for 25 to 30 minutes or until juices run clear when chicken is pierced with a fork.
  5. Serve immediately.
