Creamy Lemon Bars

Crust:
4 cups vanilla wafers
1/3 cup pecans, finely chopped
1/3 cup butter or margarine, melted
1 tablespoon granulated sugar
Filling:
16 ounces cream cheese, softened
1/4 cup granulated sugar
1 egg
1 lemon
Heat oven to 350 degrees F.
Using food chopper, finely chop wafers and pecans. Reserve 1/2 cup.
In bowl, combine chopped wafers, nuts and melted butter. Press onto bottom of
9 x 13-inch baker.
In bowl combine cream cheese, sugar and egg. Using lemon zester/scorer, zest
1 tablespoon lemon peel.
Using lemon aid, squeeze 3 tablespoons of lemon juice; add peel and juice to
cream cheese. Cream mixture until smooth using wooden spoon. Using super scraper,
spread over crust. Sprinkle with reserved 1/2 cup chopped wafers. Bake for 20 to
25 minutes or until set. Cool.
