Impossible Taco Pie
Yield: 6 to 8 servings
Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 envelope taco seasoning mix
- 1 small can kernel corn, drained (optional)
- 1 (4 ounce) can chopped green chiles, drained
- 3 eggs
- 1 1/4 cups milk
- 3/4 cup Bisquick or Biscuit Baking Mix
- 1 cup shredded Monterey jack or Cheddar cheese
Instructions
- Heat oven to 400 degrees F. Grease a 10 inch cast iron skillet..
- Cook and stir ground beef and onion until beef is brown; drain.
- Stir in dry taco seasoning mix and corn, if using.
- Spread in skillet; sprinkle with green chiles.
- Beat milk, eggs and baking mix until smooth, 15 seconds in blender on high or for 1 minute with hand beater.
- Pour over beef mixture in skillet.
- Bake for 25 minutes.
- Sprinkle with cheese.
- Bake until cheese is golden brown and knife inserted in center comes out clean, 8 to 10 minutes longer.
- Cool for 5 minutes.
- Serve topped with sour cream, shredded lettuce, diced tomatoes and sliced avocados, if desired.
