Cajun and Creole Recipes

Louisiana Fig Cake

1 egg
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/2 cups butter or margarine
1 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 pint fig preserves

Heat oven to 350 degrees F. Butter a 9-inch square pan.

Beat together egg, sugar and vanilla extract. Add butter.

Sift together flour, baking powder and salt. Add to egg, sugar and vanilla mixture, then add preserves. Bake prepared pan for 35 to 40 minutes.
