1 papaya (save seeds)
2 kiwis
1 cup quartered strawberries
1 pear
1 apple
Dressing:
3 tablespoons papaya seeds
1/2 cup plain low-fat yogurt
4 tablespoons ground sunflower seeds
1 tablespoon honey
1 tablespoon lemon juice
Pinch salt
1 tablespoon olive oil
Cut the papaya in half and scoop out the seeds. Save for the dressing. Cut off the peel and cut into cubes. Peel the kiwis and slice. Cube the apple and pear and add the strawberries. Toss with the dressing.
Serves 4 as a side dish.
For dressing: Blend all dressing ingredients in a blender, including papaya seeds, drizzling oil a little at a time at end.
