Smoked Salmon Pasta Salad recipe

2 1/2 cups medium shell macaroni
1/4 cup lemon juice
3 tablespoons snipped fresh dill weed
4 teaspoons Dijon-style mustard
2 teaspoons sugar
1/4 teaspoon salt
1/8 teaspoon pepper
3 tablespoons peanut oil
6 ounces skinned, boned and flaked hot smoked salmon
1/2 cup coarsely chopped cucumber
1/4 cup snipped fresh chives

Cook pasta according to package directions. Drain, then rinse with cold water, and drain well. Return to saucepan; set aside.

In a small bowl whisk together the lemon juice, dill weed, mustard, sugar, salt and pepper. Slowly add peanut oil in a thin steady stream, whisking constantly. Add the dressing to pasta along with the salmon, cucumber and chives. Toss mixture to coat well. Serve immediately.

Makes 4 main dish servings.
