Wasabi Coleslaw

Wasabi Cole Slaw

Yield: 6 servings

Ingredients

Salad

  • 6 cups (about 1/2 head) thinly sliced green cabbage
  • 1 cup shredded carrots
  • 3 tablespoons sliced scallion greens or parsley

Dressing

  • 2 1/2 tablespoons water
  • 5 teaspoons wasabi powder
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons granulated sugar
  • 1/3 cup mayonnaise
  • 1/4 cup canola oil or grapeseed oil
  • Several drops hot sauce
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Combine the cabbage, carrots and scallions or parsley in a large bowl and set aside.
  2. Combine the water and wasabi powder in a small bowl and mix until a paste forms. Set aside.
  3. In another small bowl, whisk together the vinegar and sugar until the sugar dissolves.
  4. Whisk in the mayonnaise, oil and hot sauce.
  5. Add the wasabi paste, salt and pepper. Mix well.
  6. Let stand for 10 to 15 minutes.
  7. Just before serving, toss the dressing with the slaw.
