Side Dish Recipes
Wasabi Coleslaw
Yield: 6 servings
Ingredients
Salad
- 6 cups (about 1/2 head) thinly sliced green cabbage
- 1 cup shredded carrots
- 3 tablespoons sliced scallion greens or parsley
Dressing
- 2 1/2 tablespoons water
- 5 teaspoons wasabi powder
- 2 tablespoons apple cider vinegar
- 2 teaspoons granulated sugar
- 1/3 cup mayonnaise
- 1/4 cup canola oil or grapeseed oil
- Several drops hot sauce
- Salt and freshly ground black pepper, to taste
Instructions
- Combine the cabbage, carrots and scallions or parsley in a large bowl and set aside.
- Combine the water and wasabi powder in a small bowl and mix until a paste forms. Set aside.
- In another small bowl, whisk together the vinegar and sugar until the sugar dissolves.
- Whisk in the mayonnaise, oil and hot sauce.
- Add the wasabi paste, salt and pepper. Mix well.
- Let stand for 10 to 15 minutes.
- Just before serving, toss the dressing with the slaw.
